From Caitlin’s Kitchen: Smashed Peas, Sausage and Ricotta

This is one of my favorite Giada recipes. It’s sooo simple and it is incredibly fast, but it is rich and fresh tasting. I have been meaning to post this for awhile, but had forgotten about it. I need to add this back into my rotation! You’ll probably find most of the ingredients in the oven and the hardest part is probably tossing everything together. It is great for a date night, a quick weeknight dinner, or a dinner party.
1 pound spicy or sweet sausage, casings removed and crumbled
1 pound long pasta
2 tablespoons olive oil
2 cloves or garlic, minced
1 cup of frozen peas, thawed
1 bunch basil, chopped
Bring a large pot of water to a boil and add salt and a little bit of olive oil. Add pasta and cook until al dente. Drain pasta, reserving about 1 cup of pasta water.
Heat oil in a large skillet over medium heat. Add sausage and cook until browned, about 5 minutes. Remove sausage from skillet and add peas. Smash peas with the back of a wooden spoon. Remove from heat and add ricotta, pasta, and sausage. Toss until the pasta is well coated. Add about a 1/2 a cup of pasta water to moisten the pasta. Add basil and serve immediately.
